Yes drop it, I believe the book mentions to add fresh yeast simply because the ABV is so high. They want to ensure that you get a proper carbonation in your bottle / kegs.

I do not understand the recipe at all. First of all, if you want to brew a Schneider beer the yeast should be as close to the original as it can possibly be. So Wyeast 3068 is the first choice here (even though it is the original Weihenstephan it still resembles the Schneider aroma profile...

never ever order from brauen.de. Thats the by far most expensive shop in Germany.
Go for http://www.hobbybrauerversand.de/ they are cheap (29 euro for a 25kg sack of base malt, hops are as well) and shipping is only 5 euro for the whole order, doesnt matter how many kg you go for...
