Do not use soft packs or sachets that appear to have lost their vacuum. Once a pack or sachet is open, use immediately for best results. If kept sealed (or re-sealed) under vacuum and stored under appropriate conditions, dry yeast can be used until the indicated expiration date, which is typically 2-3 years after manufacture. Yeah, Fermentis sells several of their dry yeasts in 500 gram bricks. I usually get mine from Adventures in Homebrewing, but may stores carry them. The expiration date on the package is 2 years from production, but kept cold it will last longer. While not exactly the same, I've got a brick of bakers yeast that is from 2010 that still makes fantastic pizza dough.
I typically store \~30 grams in the fridge for easy access. Then everything else is in the original packaging, triple wrapped in heavy duty aluminum foil, then in two zip top bags to keep smells and flavors out.
